Tonight, our focus turns to a ten-year-old Caol Ila, aged in a second-fill American oak cask.

The signature smoky peat of Caol Ila asserts itself right from the first sip, accompanied by an oily texture reminiscent of paraffin or cod liver oil. The finish leans toward dry wood and white pepper.
