A new tasting from my favorite distillery, Kilchoman, which undoubtedly remains one of the most prolific distilleries in terms of production variety.
Some might say it lacks focus, but that is precisely what makes it so charming.
Nonetheless, the single casks are often outstanding achievements, showcasing the remarkable quality of their distillate.
Tonight, we have the pleasure of tasting a twelve-year-old Kilchoman matured in a sherry cask. Suffice it to say, the peat is not only present but overwhelming. It is a veritable inferno spreading across the palate, delivering smoke of rare intensity while allowing notes of roasted coffee and fine wood to emerge.
Yet another triumph for this distillery, which will soon celebrate its 20th anniversary.
