Israel is a land full of surprises and rich history—but it doesn’t end there. Since 2015, the Milk & Honey Distillery has been crafting its gems in a former industrial building on the outskirts of Tel Aviv.
Having earned a solid reputation, several independent bottlers have acquired casks from this distillery, including Watt Whisky, which brings us this malt distilled in 2018 and matured in an STR cask (Shaved, Toasted, and Recharred).
The result lives up to expectations for a process popularized by Dr. Jim Swan, designed to enhance the complexity of young whiskies by infusing them with notes of red fruits.
And that’s exactly what we find in this Milk & Honey expression: wild strawberry and chocolate notes, finishing with a moderate touch of oak. A hint of chili heat builds as one sips, suggesting that a drop of water might help temper the spirited character of this youthful whisky.
Nonetheless, it clearly reflects the high production standards of this distillery.
