Prenons aujourd’hui le temps de nous intéresser à des îles du nord de l’écosse, un peu moins célèbre que leur grande sœur Islay, j’ai nommé les Orcades (Orkney en anglais) et la distillerie la plus célèbre des deux actives sur ces terres : Highland Park !
Avoir une bouteille de Highland Park devant soi c’est contempler 223 ans d’histoire parfois nébuleuse mais toujours empreinte de savoir-faire et de saveur inimitable.
Highland Park est l’une de ces distilleries ayant réussi le tour de force de créer son style reconnaissable.
Profitant d’un terrain chargé en carbone, son fumé est légendaire.
Nous aurons donc ces prochains jours une série de 5 embouteillages dont le premier ce soir est le Harald faisant partie de la fameuse Warrior Series destinée aux Duty Free Shops.
Le palais est agréable (on titre à 40%), fort peu agressif. La saveur est dans la lignée de la distillerie, chargée de quelque fumée. Le corps sera plutôt conventionnel sur le miel, le caramel, la vanille pour se terminer sur des notes de beurre de cacahuètes.
Un whisky passe-partout, marqué par le style HP qui ravira la masse sans enthousiasmé le connaisseur.
