Poursuite de mon petit tour de la Scandinavie avec un arrêt au Danemark. Il m’avait été déjà donné de savourer un whisky danois de la distillerie Fary Lochan mais cette fois ce sera la toute nouvelle distillerie Stauning fondée en 2018 qui sera sur ma liste.
Stauning se définit comme une distillerie atypique et, en effet, son mode de distillation, sans être révolutionnaire, est pour le moins original.
Plutôt que de miser sur de gros alambics, ils se sont tournés vers vingt-quatre petits alambics produisant seulement quelques centaines de litres chacun.
Le batch testé ce soir est le Smoke #1-2020 de 3 ans d’âge et mâturé en fûts de Rhum, de Madère et de Bourbon.
Sans surprise, la touche fumée est belle et bien présente (c’eut été balot de l’appeler “smoke” sinon). Un whisky frais et fruité sur la mirabelle et la menthe verte puis plus épicés à mesure que le temps passe révélant quelques notes crayeuses, terreuses.
On peut dire que c’est plutôt pas mal réussi comme livraison. Finalement, les danois semblent plutôt doués dans ce domaine.

Continuation of my little tour of Scandinavia with a stop in Denmark. I had already tasted a Danish whisky from the Fary Lochan distillery, but this time it will be the brand new Stauning distillery founded in 2018 that will be on my list.
Stauning defines itself as an atypical distillery and, indeed, its method of distillation, without being revolutionary, is original to say the least.
Rather than relying on large stills, they opted for twenty-four small stills producing only a few hundred liters each.
The batch tested this evening is Smoke #1-2020, 3 years old and matured in barrels of Rum, Madeira and Bourbon.
Unsurprisingly, the smoky touch is nice and present (it would have been foolish to call it “smoke” otherwise). A fresh and fruity whisky on mirabelle plum and spearmint then more spicy as time goes by, revealing some chalky, earthy notes.
We can say that it is rather not badly successful as a delivery. Finally, the Danes seem rather gifted in this area.
