UNE CREME VANILLE AU CHARBON DE BOIS – Score: 8/10
Ce soir, c’est Kilchoman, dégusté chez un ami iranien plein de bon goût. Parmi ces bouteilles (quelques Balvenie, Arran, BenRiach et autres sympathiques Longmorn), mon oeil se pose sur une boite rouge dans le fond de l’armoir.
Eh oui, c’est bien un Kilchoman Single Cask qui se cache, encore fermée, n’attendant que mon passage pour être dépucelée.
Je me verse ce nectar vieilli 9 ans durant dans une barrique de bourbon et savoure le résultat de ce mariage. D’abord, et c’est son premier plus gros atout, une onctuosité inimitable. La texture est d’une douceur incroyable, tapissant toute la bouche d’une saveur vanillée d’un raffinement frisant la perfection.
Vient ensuite, naturellement, cette tourbe incomparable, propre à Kilchoman. Ils ont réellement trouvé leur style. Quelques notes citrique, un chouillat de réglisse (mais vraiment un chouillat) et une finale allégée sur la cendre et la crème pâtissière.
On regrettera un brin de monotonie, toujours pas d’explosion aromatique chez Kilchoman, mais je suis certain que cela viendra avec les futurs embouteillages ayant pu prendre plus de maturité. Je salive déjà de pouvoir goûter des Kilchoman de 18, 25 voire 30 ans
A VANILLA CREAM WITH CHARCOAL – Score: 8/10
Tonight is Kilchoman, tasted at the house of a tasteful Iranian friend. Among his bottles (a few Balvenie, Arran, BenRiach and other friendly Longmorn), a red box catches my eyes in the back of the cabinet.
Yep, it’s a Kilchoman Single Cask hiding, still closed, just waiting for my venue to be deflowered.
I pour myself this nectar aged 9 years in a bourbon barrel and savor the result of this marriage. First, and this is its first biggest asset, an inimitable smoothness. The texture is incredibly smooth, lining the whole mouth with a vanilla flavor of a refinement bordering on perfection.
Then comes, of course, this incomparable peat, unique to Kilchoman. They really found their style. Some citric notes, a little liquorice (but really a tiny little) and a light finish on ash and custard.
We regret a bit of monotony, still no aromatic explosion at Kilchoman, but I am sure that this will come with future bottlings which may have matured. I’m already salivating by thinking to taste 18, 25 or even 30-year-old Kilchoman
