Une grosse série de Kilchoman s’entame avec cette première dégustation d’une des premières cuvées de cette distillerie fondée en 2005.
Datant de Novembre 2006 et vieilli seulement 3 ans (qui est le minimum légal pour pouvoir s’appeler “Whisky”) dans un fût de sherry neuf, ce Kilchoman nous inspire dès les premières effluves rappelant l’embrun maritime des côtes écossaises.
Le style gustatif de la distillerie est bel et bien présent, mêlant fumée et tourbe. Une texture gourmande rappelant le beurre fondu mêlée de chocolat donne à ce malt un côté pâtissier tournant subitement vers le bacon. La finale vanillée se partage sur une touche poivre et sel donnant à ce breuvage tout son équilibre.
Encore une belle réussite pour cette distillerie devenue quasi incontournable sur Islay.

A big series of Kilchoman begins with this first tasting of one of the first vintages of this distillery founded in 2005.
Dating from November 2006 and aged only 3 years (which is the legal minimum to be called “Whisky”) in a new sherry cask, this Kilchoman inspires us from the first scents reminiscent of the sea spray of the Scottish coasts.
The style of the distillery is indeed present, mixing smoke and peat. A gourmet texture reminiscent of melted butter mixed with chocolate gives this malt a pastry side suddenly turning into bacon. The vanilla finish is shared with a touch of salt and pepper, giving this drink its full balance.
Another great success for this distillery that has become almost essential on Islay.
