Reçu d’un membre du célèbre whisky club “The Highlander”s” basé à Bruxelles, une dose de ce Kilchoman 2007 vieilli 5 ans durant en fût de sherry.
Ce fût est sélectionné par l’importateur de spiritueux italien Beija Flor , il est donc intéressant de voir si la réputation des embouteilleurs italiens – je pense notamment à Moon Import, SIlver Seal (ex-Sestante) ou encore l’incommensurable Samaroli – est respectée.
L’approche est toujours aussi nette avec Kilchoman, la texture est onctueuse et dénotte d’une parfaite maîtrise de l’art distillatoire.
Par contre, la force de sa fumée semble atténuée, laissant une saveur de cigare froid, de cendre humide. Le vin est fort prononcé et se mêle difficilement avec l’âcreté du tabac froid.
La finale est persistante mais malheureusement sur une note trop sucrée à mon goût.
Pas le plus grand Kilchoman à mon humble avis.

Received from a member of the famous whisky club “The Highlander”s” based in Brussels, a sample of this Kilchoman 2007 aged for 5 years in sherry casks.
This barrel is selected by the Italian spirits importer Beija Flor , so it is interesting to see if the reputation of Italian bottlers – I am thinking in particular of Moon Import, SIlver Seal (ex-Sestante) or the legendary Samaroli – is respected .
The approach is always neat with Kilchoman, the texture is unctuous and denotes a perfect mastery of the art of distillation.
On the other hand, the strength of its smoke seems to be attenuated, leaving a flavor of cold cigar, of wet ashes. The wine is very pronounced and hardly mixes with the pungency of cold tobacco.
The finish is persistent but unfortunately on a too sweet note for my taste.
Not the greatest Kilchoman according to my humble taste.
