On repart sur Kilchoman après une petite incartade du côté de Bruichladdich. Et cette fois, ce sera une maturation atypique qui nous sera donné de goûter.
En effet, nous sommes plutôt habitué, en matière de vieillissement en fût de sherry, à rencontrer les classiques Oloroso ou Pedro Ximenez. Celui-ci est un Fino qui, contrairement aux deux autres, est un vin blanc.
L’impact gustatif est immédiat car les saveurs caractéristiques des sherry rouge (fruits rouges, chocolat, café,…) sont absent ici.
Nous aurons par contre des notes mielleuse, de sucre d’orge mêlées à l’inimitable tourbe fumée de Kilchoman, la combinaison est tout simplement réussie.
Un whisky très agréable à boire en fin de repas.

Indeed, we are rather accustomed, in terms of aging in sherry casks, to encountering the classic Oloroso or Pedro Ximenez. This is a Fino which, unlike the other two, is a white wine.
The taste impact is immediate because the characteristic flavors of red sherry (red fruits, chocolate, coffee, etc.) are absent here.
On the other hand, we will have honeyed notes, barley sugar mixed with the inimitable smoked peat of Kilchoman, the combination is simply successful.
A very pleasant whisky to drink after a good meal.
