C’est avec plaisir ce soir que je m’attaque à ce Tobermory 2006 embouteillé par Signatory Vintage qu’il n’est plus nécessaire de présenter tellement cet embouteilleur est connu de tous.
Ce whisky est vieilli durant 12 ans dans un fût de sherry. Celui-ci est réduit à 46% par le maître de chais de chez SV ce qui, me semble, est une bonne décision car l’équilibre éthylique est intéressant. Sans doute aurait-il été trop puissant en bouche si l’était resté brut de fût.
En bouche, ce Tobermory est bien présent avec une texture médiane, ni trop aqueux, ni trop épais. Le malt laiteux se manifeste très rapidement au palais suivi par une grosse présence de fruits cuits rappelant le sirop de Liège (pour les connaisseurs). La finale est sur le café noir mais sans amertume particulière.
Un whisky riche et racé qui séduira les amateurs du genre. A déguster en fin de repas.

It is with pleasure this evening that I taste this Tobermory 2006 bottled by Signatory Vintage that it is no longer necessary to present this well-known bottler.
This whisky is aged for 12 years in a sherry cask and is reduced to 46% by the master blender at SV which, to me, is a good decision as the ethylic balance is interesting. No doubt it would have been too powerful on the palate if it had remained at cask strength.
On the palate, this Tobermory is very present with a median texture, neither too watery, nor too thick. The milky malt manifests itself very quickly on the palate followed by a large presence of cooked fruit reminiscent of Liège syrup (for connoisseurs). The finish is on black coffee but without any particular bitterness.
A rich and racy whisky that will appeal to fans of the genre. To be enjoyed at the end of the meal.
