Poursuivant ma revue des nouvelles distilleries, je passe dans le nor de l’Ecosse, chez Wolfburn, celle la plus au nord des Highlands.
Contrairement aux autres nouvelles distilleries, celle-ci est en fait une réouverture car une ancienne distillerie Wolfburn existait en 1821 et se clôtura trente-sept ans plus tard en 1858.
Ce n’est qu’en 2013 qu’est réouverte cette vieille distillerie n’ayant pas une grande réputation.
Cette version est celle de la série ‘From the Stills” vendue uniquement à la distillerie, datant du printemps 2020 et vieillie en fût de sherry et d’octave.
La texture est aqueuse et fortement marquée par le bois et la térébanthine. Fort mentholée, la finale est toute aussi amère, succèdant à des saveurs de vieux chewing gum rappelant le red bull.
Clairement pas un whisky décent, ce qui me laisse fortement désapointé.

Continuing my review of new distilleries, I go to the north of Scotland, to Wolfburn, the northernmost one in the Highlands.
Unlike the other new distilleries, this one is actually a reopening as a former Wolfburn distillery existed in 1821 and closed thirty-seven years later in 1858.
It was not until 2013 that this old distillery, which did not have a great reputation, reopened.
This version is from the ‘From the Stills’ series sold only at the distillery, dating from spring 2020 and aged in sherry and octave casks.
The texture is aqueous and strongly marked by wood and turpentine. Strongly minty, the finish is just as bitter, following flavors of old chewing gum reminiscent of red bull.
Clearly not a decent whisky, which leaves me very disappointed.
