Au Col de Cygne, on rencontre des personnes, des personnalités mais aussi, et surtout, des personnages. J’y ai rencontré un soir une personne admirable de bonté, de générosité et d’intelligence avec qui le partage ne fût pas qu’intellectuel.
Notre soirée fut conviviale et instructive puis soudainement, mon camarade de dégustation pris une décision surprenante : il souhaita m’offrir un verre exceptionnel et son choix se porta sur ce vieil Highland Park 25 ans de 1970 et embouteillé en 1995.
Les vapeurs me montent à la tête de déguster un whisky aussi prestigieux (on tourne aux alentours de 2000€ la bouteille tout de même).
Mon camarade n’en a cure et insiste pour qu’on l’ouvre. Le tenancier s’exécute et nous voici face à un verre de 3cl de Highland Park 25 ans.
Vu la couleur, nul doute que le malt est passé par un fût de chêne ayant contenu du sherry. Et quel sherry mes amis…
On y retrouve à la fois toutes les saveurs d’un bon vieillissement en fût de sherry et les notes caractéristiques des whiskies d’antan. Le tabac et le sirop de Liège seront les premiers à se manifester suivi d’une pointe de caramel mou. Le boisé ne sera pas absent et complètera la finale mi poivre, mi piment. Un profil rappellant les vieux rhums agricoles sans le côté sucré.
Un vrai Highland Park tel qu’on les aime et tel qu’ils ne sont malheureusement plus.

At Le Col de Cygne, we meet people, personalities, but also, and above all, characters. One evening, I met an admirable person of kindness, generosity, and intelligence with whom sharing was not just intellectual.
Our evening was convivial and informative, and then suddenly, my tasting companion made a surprising decision: he wished to offer me an exceptional drink, and his choice fell on this old Highland Park 25-year-old from 1970 and bottled in 1995.
The vapors rose to my head as I tasted such a prestigious whisky (which costs around €2,000 per bottle).
My companion doesn’t care and insists that we open it. The landlord complies, and here we are facing a glass of 3cl of Highland Park 25 years old.
Given the color, there is no doubt that the malt has passed through an oak barrel that once contained sherry. And what sherry, my friends…
We find both all the flavors of a good aging in sherry cask and the characteristic notes of old whiskies. Tobacco and Liège syrup will be the first to manifest, followed by a hint of soft caramel. The woody note will not be absent and will complete the half-pepper, half-chili finish. A profile reminiscent of old agricultural rums without the sweet side.
A true Highland Park as we love them and as they unfortunately no longer exist.Regenerate response
